A vegan pub favourite. This healthy yet hearty dish combines parsnips, sweet potatoes, carrots and potatoes with tomato and spices.

Ingredients: parsnips, sweet potatoes, vegetable stock, tomato paste, carrots, potatoes, garlic, salt, pepper, vegetable and/or olive oil.

Serves 2-3 depending on desired portion size.
