Fresh red peppers are roasted and packed full with a mixture of heart healthy quinoa, black beans, diced fresh vegetables and herbs. Topped with aged cheddar. An unbelievably satisfying vegetarian dish!

Ingredients: Fresh bell peppers, quinoa, tomatoes, black beans, medium salsa (tomatoes, water, jalapeno peppers, tomato paste, onions, white vinegar, garlic), fresh onions, aged cheddar cheese, fresh zucchini, sweet corn, fresh carrots, fresh celery, fresh cilantro, fresh garlic, DSG chipotle infused olive oil, salt, pepper, spices.

small: serves 1

medium: serves 1-2 (depending on desired portion size)

large: serves 3-6 (depending on desired portion size)
