Roasted Vegetable + Goat Cheese Croissant Quiche
We use fresh sliced croissants instead of pie pastry for a delicious twist on traditional quiche. Fresh vegetables (oyster mushrooms, zucchini, eggplant, red and yellow peppers, artichokes, onions and spinach) are combined with fresh tangy goat cheese, eggs and 35% cream. Serve with dressed mixed greens for a light dinner or as part of a decadent brunch.
