This quinoa stew takes its inspiration from Central and South American sofritos, which form the flavour base of many dishes. This savoury dish, which is not too hot but adequately spicy, is full of fibre, protein and vegetables making it a perfect meal-in-a-bowl that will leave vegetarians and meat-lovers alike feeling satisfied.
