Cashew Tofu Curry / on Coconut Rice

A vegan version of a DSG+G favourite! We make a flavourful sauce with caramelized onions, tomatoes, coconut milk and spices. Finely ground cashews are for added richness, and raisins for a hint of sweetness. A generous amount of firm tofu makes this dish healthy and satisfying. Served on a bed of toasted coconut rice.
