Seasoned and diced chicken breast is added to a slowly simmered sauce made with caramelized onions, tomatoes, coconut milk, fresh ginger and spices. Finely ground cashews are added for richness, and raisins for a hint of sweetness. Served on a bed of toasted coconut rice.
