This from-scratch soup is packed full of flavour and goodness! Ontario carrots are blended with coconut milk, caramelized onions, maple syrup, ginger and fresh spices like coriander, cumin and turmeric. Try it on it's own or serve with fresh naan bread.

Ingredients: Ontario carrots, vegetable stock, coconut milk, caramelized white onions, green onions, maple syrup, curry powder, ginger, garlic, turmeric, fennel, coriander, cumin, parsley, olive oil, maple syrup, salt, pepper.

900 ml, serves 2-3 depending on desired portion size.
