This gluten free quesadilla combines roasted vegetables, caramelized onions, melted double cream brie and swiss cheese, and is finished with red pepper jelly. It makes for a delicious snack or meal you can have on the go. For a great appetizer, cut each quesadilla into 10 or 12 wedges and serve.
