A vegetarian favourite! This quesadilla combines roasted vegetables, caramelized onions, melted double cream brie, swiss cheese and is finished with Rootham’s local sweet and tangy red pepper jelly. It makes for a delicious snack or meal you can have on the go.

To serve as an appetizer, cut each quesadilla into 10 or 12 wedges and serve with sour cream (add chopped fresh cilantro and lime zest to the sour cream if desired).

Gluten free corn tortilla shells, bell peppers, red onions, asparagus, carrots, zucchini, squash, sweet potatoes, brie, swiss, pepper jelly, canola oil.

serves 1-2 (depending on desired portion size)
