This gluten free, classic quesadilla is popular with children and adults alike! Layered with diced chicken breast, aged cheddar and mild spiced salsa, it makes for a delicious snack or meal on the go.
To serve as an appetizer, cut each quesadilla into 10 or 12 wedges and serve with sour cream (add chopped fresh cilantro and lime zest to the sour cream if desired).
Ingredients: Corn tortilla shells, boneless skinless chicken breasts, onions, medium salsa, aged cheddar cheese, canola oil.
