Moist and tender eggplant is coated in a crisp panko crust and smothered in rich tomato sauce and a blend of gourmet cheeses. This meatless meal pairs nicely with a mixed green salad or our tomato basil soup.

Ingredients: Fresh eggplant, swiss cheese, parmesan cheese, panko bread crumbs, tomato sauce (tomatoes, water, salt, sugar, citric acid, garlic powder, onion powder, spices), milk, eggs, flour, salt, pepper, spices, vegetable oil.

large: serves 4-6 (depending on desired portion size)
