Fragrant and full of flavour, this delicious vegan curry combines tender tofu, vegetables and coconut milk with hot peppers, ginger, garlic, lemongrass and lime leaf. Medium/Mild spice. Serve over steamed rice.

Ingredients: coconut milk, tofu, vegetable stock, tri-color peppers, Thai basil, hot peppers, ginger, vegetarian oyster sauce, potato, garlic, lemongrass, lime leaf, green beans, Thai chili powder, vegetable and/or olive oil.

Serves 2-3 (depending on desired portion size)
