Inspired by the French favourite Beef Bourguinon, this new vegan classic owes its richness to hearty mushrooms, eggplant, carrots, parsnips, pearl onions and a generous splash of fig balsamic vinegar. Served on a bed of garlic cauliflower mash, it's a dish both vegans and meat eaters will enjoy.

Bourguignon ingredients: mushrooms, eggplant, onions, parsnips, carrots, vegetable stock, pearl onions, garlic, DSG black mission fig balsamic, thyme, DSG garlic olive oil, tomato paste, salt spices.

Mashed cauliflower ingredients: cauliflower, DSG sweet butter olive oil, garlic, DSG garlic olive oil, thyme, salt, pepper.
